Hops contribute different compounds depending on temperature, time and contact with wort or beer. Designing a hop schedule means balancing bitterness, flavour, aroma, cost and product stability.
Boil additions
During the boil, heat isomerises alpha acids into bitter iso-alpha acids. Longer contact generally increases utilisation, while much of the delicate oil fraction evaporates. The boil also sterilises wort, drives off unwanted volatiles and coagulates proteins.
Whirlpool additions
Hops added after flame-out retain more oil but can still add bitterness while wort remains hot. Lower whirlpool temperature reduces isomerisation and changes extraction. Time, temperature and hop load should therefore be recorded together.
Dry hopping and oxygen
Dry hopping extracts aromatic compounds into fermented beer. Contact time and temperature affect extraction and plant-derived flavours. Because oxygen rapidly dulls fresh hop aroma and creates stale flavours, closed handling and low-oxygen packaging are essential for hop-forward beer.
