Sensory profile

History

Lager brewing developed in Central Europe around cool fermentation and cold storage. The adoption of pure yeast cultures and mechanical refrigeration in the nineteenth century made year-round production possible.

How it is brewed

Lager yeast ferments best at cooler temperatures than most ale strains. A controlled maturation period reduces sulphur compounds and diacetyl while allowing the beer to clarify.
